Savor the Sunshine: 5 Nutritious and Easy Summer Recipes

Hey there, lovely! Summer is the perfect time to enjoy light, nutritious, and easy-to-make meals. Remember, 80% of your results come from nutrition, so even if you indulge in a few extra treats, the more good stuff you put in, the less room there is for the not-so-great stuff.

Vegan Quinoa Salad

Ingredients:

- 1 cup quinoa

- 2 cups water

- 1 can chickpeas, drained and rinsed

- 1 cucumber, diced

- 1 bell pepper, diced

- 1 cup cherry tomatoes, halved

- 1/4 cup red onion, finely chopped

- 1/4 cup fresh parsley, chopped

- 1/4 cup fresh mint, chopped

- 1/4 cup olive oil

- 2 tbsp lemon juice

- Salt and pepper to taste

 

Instructions:

  1. Rinse quinoa and cook it in water according to package instructions.
  2. In a large bowl, combine cooked quinoa, chickpeas, cucumber, bell pepper, cherry tomatoes, red onion, parsley, and mint.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour over the salad and toss to combine.
  4. Serve chilled and enjoy this refreshing and protein-packed vegan meal.

 

Vegetarian Zucchini Noodles with Pesto

Ingredients:

- 4 medium zucchinis, spiralized

- 1 cup cherry tomatoes, halved

- 1/4 cup pine nuts

- 1/2 cup fresh basil leaves

- 1/4 cup grated Parmesan cheese

- 1/4 cup olive oil

- 2 cloves garlic

- Salt and pepper to taste

 

Instructions:

  1. In a food processor, combine basil, Parmesan, pine nuts, garlic, salt, and pepper. Slowly add olive oil while processing until smooth.
  2. Toss zucchini noodles with pesto until evenly coated.
  3. Add cherry tomatoes and gently mix.
  4. Serve immediately and enjoy this light and flavorful vegetarian dish.

 

Grilled Chicken with Mango Salsa

Ingredients:

- 2 boneless, skinless chicken breasts

- 1 mango, diced

- 1/2 red bell pepper, diced

- 1/4 red onion, finely chopped

- 1/4 cup fresh cilantro, chopped

- 1 lime, juiced

- 1 tbsp olive oil

- Salt and pepper to taste

 

Instructions:

  1. Season chicken breasts with salt, pepper, and olive oil. Grill until cooked through.
  2. In a bowl, combine mango, bell pepper, red onion, cilantro, lime juice, salt, and pepper.
  3. Top the grilled chicken with mango salsa.
  4. Serve with a side of mixed greens for a delicious and protein-rich meal.

 

Baked Salmon with Avocado Salad

Ingredients:

- 2 salmon fillets

- 1 tbsp olive oil

- 1 tsp garlic powder

- 1 avocado, diced

- 1 cup cherry tomatoes, halved

- 1/4 cup red onion, finely chopped

- 2 tbsp fresh cilantro, chopped

- 1 lime, juiced

- Salt and pepper to taste

 

Instructions:

  1. Preheat the oven to 375°F (190°C). Place salmon fillets on a baking sheet, drizzle with olive oil, and sprinkle with garlic powder, salt, and pepper.
  2. Bake salmon for 15-20 minutes until cooked through.
  3. In a bowl, combine avocado, cherry tomatoes, red onion, cilantro, lime juice, salt, and pepper.
  4. Serve the baked salmon with avocado salad on the side.

 

Healthy Berry Yogurt Parfait (Dessert)

Ingredients:

- 1 cup Greek yogurt

- 1 cup rebecca’s healthy meal mix

- 1/2 cup mixed berries (strawberries, blueberries, raspberries)

- 1/4 cup granola

- 1 tbsp honey

- Fresh mint for garnish

 

Instructions:

  1. Mix the greek yogurt and healthy meal mix together
  2. In a glass or bowl, layer Greek yogurt, mixed berries, and granola.
  3. Drizzle with honey.
  4. Garnish with fresh mint.
  5. Enjoy this light and nutritious dessert that satisfies your sweet tooth without the guilt.
