Chicken Curry With Tomatoes

We are almost 1 week into the new year and I know a lot of people’s New Year’s Resolutions is to lose weight and get fit. So here is a recipe that is going to help with the journey! Eating the right amount of protein each day is key to the success for your results and if you would like to know exactly how much you should eat for the results that you want get started on my Nutrition Plan!

This is a recipe that I love and I don’t normally add in the curry powder as I cannot even take a drop of spice! You can use as much or as little as you like depending on how hot you like it!

What You will need:

1 cup of brown rice
2 tbsp. olive oil
1½ lb. boneless, skinless chicken breasts
2 tsp. curry powder (if you can take spice!)
Some salt and pepper
¾  Cup dry white wine
1 onion
2 clove garlic
1 tbsp. grated fresh ginger
1 pt. grape tomatoes
¾ c. frozen peas

What do you need to do?

Start off by cooking the brown rice (better alternative to white rice) under under. Make sure that you boil the water before you add the rice in to the pan for best results!

During this time you can heat 1 tablespoon of oil in a large pan over medium-high heat. Season the chicken with the curry powder and add 1/4 tsp each salt and pepper and cook until browned. This normally takes around 2 to 3 minutes per side.

Take the chicken and transfer to a bowl. Add the wine to the pan (if you are using wine) and cook for 2 minutes. Transfer to the bowl with the chicken. Wipe out the pan clean and heat the remaining tablespoon oil over medium heat. Add the onion and cook, covered, stirring occasionally, for 6 minutes. Stir in the garlic and ginger and cook for another 1 minute.
Take the chicken and wine to the pan, add the tomatoes and peas, and cook until heated through, about 3 minutes. Serve over the rice.. there you have it! Super simple and easy to keep fit and get lean!
